ASIA KITCHEN: Mrs. Lau’s Easy Meals

Ox Tail Soup

OXxTail Soup

Ingredients (serves 4-6):

1½ lbs Fresh Ox Tails
½ lb Tomatoes, cut into quarters
2 Carrots, sliced
2 Potatoes, peeled and cubed
1 Small Cabbage, cut into strips
1 can Campbell’s Tomato Soup

Directions:

  1. Cover the ox tails in cold water and bring to a boil to remove the fat. Pour out the water.
  2. Simmer the ox tails in 2 quarts of fresh water for an hour.
  3. Add all remaining ingredients except the can of Tomato Soup.
  4. Simmer for another 2 hours.
  5. Add Tomato Soup. Simmer for 10 minutes.
  6. Season to taste.

Mrs. Lau was born in Hong Kong.She moved to Orlando in 1997. Since she lives with her American son-in-law, she has to cook dishes that appeal to both Chinese and American tastes.
